Lubi-Lubi: A Traditional Filipino Coconut Dessert

Lubi-Lubi is a delightful Filipino dessert made from young coconut (locally known as “lubi” in some provinces). This sweet treat highlights the rich coconut flavors loved by many Filipinos. Perfect for merienda or special occasions, Lubi-Lubi is both easy to make and incredibly satisfying.

What is Lubi-Lubi?

Lubi-Lubi is a coconut-based delicacy that originates from the Visayas and Mindanao regions of the Philippines. It features young coconut strips cooked in coconut milk, sugar, and sometimes glutinous rice or tapioca pearls for added texture. The dessert has a creamy, slightly chewy consistency, making it a favorite among coconut lovers.

Ingredients

To make a simple yet delicious Lubi-Lubi dessert, you will need:

  • 2 cups young coconut meat (shredded into thin strips)
  • 1 cup coconut milk
  • 1/2 cup condensed milk
  • 1/2 cup sugar (adjust to taste)
  • 1/4 cup glutinous rice flour (optional, for a thicker consistency)
  • 1/4 cup small tapioca pearls (optional, for added texture)
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Prepare the Tapioca Pearls (if using): Boil water in a pot and cook tapioca pearls until they turn translucent. Drain and set aside.
  2. Cook the Coconut Strips: In a pan over medium heat, combine the young coconut meat, coconut milk, condensed milk, sugar, and a pinch of salt. Stir continuously to prevent burning.
  3. Thicken the Mixture: If using glutinous rice flour, dissolve it in a small amount of water to form a slurry. Slowly add it to the coconut mixture while stirring to thicken the dessert.
  4. Add Vanilla & Tapioca Pearls: Mix in the vanilla extract and cooked tapioca pearls. Continue stirring until everything is well combined.
  5. Cool & Serve: Once the mixture reaches a thick and creamy consistency, remove from heat. Let it cool before serving. You can enjoy Lubi-Lubi warm or chilled, depending on your preference.

Nilupak – The Ilocano Version of Lubi-Lubi

In Ilocano, Lubi-Lubi is also known as Nilupak. This dish brings back fond childhood memories for many, often prepared using a mortar and pestle (Alsong ken Al-o). The traditional version involves boiling cassava or half-ripe bananas and mashing them into a creamy consistency.

Ingredients for Nilupak (Overseas Version)

  • 2 packs frozen cassava
  • 1/4 cup condensed milk (adjust for personal taste)
  • 1/2 cup Star Margarine (or any preferred brand)

Instructions for Nilupak

  1. Boil the Cassava: Cook the cassava until tender. Be sure to remove the tough veins in the middle.
  2. Mash Thoroughly: Using a mortar and pestle or a masher, mash the cassava until smooth. It’s a great workout!
  3. Mix in Margarine: Add the margarine and continue mashing until creamy.
  4. Sweeten the Mix: Stir in the condensed milk. You can adjust the amount based on your preference.
  5. Serve and Enjoy: Shape the Nilupak into portions and top with cheese for extra flavor.

Tips for the Best Lubi-Lubi and Nilupak

  • Use Fresh Young Coconut: Freshly grated coconut gives the best flavor and texture. You can also use bottled young coconut if fresh isn’t available.
  • Adjust Sweetness: If you prefer a less sweet dessert, reduce the sugar or use evaporated milk instead of condensed milk.
  • Experiment with Toppings: Add latik (coconut curds), toasted sesame seeds, or grated cheese for extra flavor.
